Beef medallions in chocolate and sherry sauce

Ingredients

4 beef medallions of about 150 g each

2 tablespoons of sunflower oil
2 shallots
1 orange
½ teaspoon of tomato paste
0.5 dl of sherry
1.5 dl of brown background
30 g of dark chocolate, for example 100% Madagascar cocoa
3 slices of smoked bacon
1 tablespoon of flaked almonds

How to proceed
Preparation: approx. 45 minutes
Preheat the oven and a baking sheet to 80 ° C. Season the meat with salt and pepper. Brown it on each side in hot oil for 4 minutes. Arrange the meat on the pan and finish cooking in the oven for 20-25 minutes.
Cut the shallots in half. Peel the orange with a potato peeler and set the zest aside. Squeeze the orange. Briefly fry the tomato paste in the cooking juices. Add the sherry, the brown stock and 3 tablespoons of orange juice. Add the shallots, cover and cook for about 10 minutes. Take out the shallots and put them with the meat. Pour the remaining orange juice in the pan and reduce until you get 1 dl of sauce. Remove the pan from the heat. Add the chopped chocolate into the sauce and let it melt. Season with pepper and a little salt. Before serving, heat the sauce without cooking it.
Cut the orange zest into cubes and the pancetta into strips. Brown the pancetta with almonds and orange zest without adding fat in a saucepan. Arrange the meat and shallots on hot plates.
